Christmas Cheer

Wishing you all lots of Christmas cheer this week and to help you out with this, I am offering an Organic Ground Beef Lasagna, made with all organic ingredients. This lasagna has layers of wonderfully seasoned ground beef, freshly made marinara, along with ricotta and mozzarella cheeses. This is a big lasagna (serves at least 8 - 10) perfect for all the family and friends that may be visiting or to keep in the fridge as leftovers over a few days. Also included will be one of my favorite salads for this time of year, Fresh Greens w/ Raspberry Roquefort Vinaigrette. This salad has dried cranberries, green onions, and an amazing homemade dressing. We'll round out the meal with French Bread! I hope you will find this  just what you need to get you through this next week before Christmas as you are busy getting ready.

The Full Meal Deal

We're kicking it up a few notches this week with a dinner you won't want to miss! I am pulling out my dear mom's amazing recipe for Garlic-Lemon-Rosemary Pork Tenderloin. It is marinated overnight in this wonderful aromatic combination with olive oil. This is so good that I will hope you have leftovers for a pork sandwich the next day. Super Buttered Noodles are a great side dish to go along with the pork. This is one of the few dishes that we all agree we could eat every week. They are made with wide egg noodles, a little butter and sour cream and seasoned to perfection; topped off with some Parmesan cheese. Finally, so you can have your veggies too we'll include a healthy and delicious Broccoli, Grape and Walnut Salad. This salad has a tangy sweet dressing that really pops. I love to keep this in the fridge and eat it for lunch all week.

We're Off and Running

The first week of meal prep went great! Thanks so much to those who ordered meals and hopefully had a stress-free night with their family enjoying dinner with no clean-up. I got a lot of positive feedback about the portions (most of you said it was more than enough and you had left overs!). Love to hear that some of the kids who didn't think they liked beans and rice are now converts!! The salsa was a little too spicy, so I will tame that down a bit. Sorry, I know some of you don't have my Texas taste for the spicy hot. I also just got some very hot jalapenos at the market that week! What's next........... I am making up batches of my yummy California Turkey Chili. It is wonderful on its own, but also very versatile. You can serve it over pasta, on baked potatoes, in tortillas, whatever floats your boat. I am also offering a vegetarian option that will have carrots, zucchini, and mushrooms instead of turkey. Both of these will have all organic ingredients! To go along with the chili, you will get Mama Glee's Cornbread Muffins. Deliveries will be on Tuesdays from now on, as the consensus seems to be that we need meals at the beginning of the week rather than at the end of the week. Take a look at what's cooking for delivery on December 4th and let me know if you want in! We also have a wonderful dessert being offered this week - you won't want to miss this. Triple Chocolate Pound Cake (Chocolate Pound Cake with Chocolate Chips topped with Chocolate Ganache). I can't think of a better gift for teachers, co-workers, or neighbors. It's also a great thing to have on hand to take to all those holiday gatherings. We are even selling it by the slice so you can order just a piece or two to have for dessert with your meal.
