Happy Spring?!

For Delivery Tuesday, March 26th

Spring is here, but it sure doesn't feel like it. So, in anticipation of those warmer, sunnier days our menu this week will be all about Spring! We'll start off with Chicken Salad Croissants . These sandwiches have an amazing chicken salad filling. I start off with diced seasoned roasted chicken breast and add in pecans and walnuts, fresh herbs, and green grapes pulled together with a wonderful dressing of light sour cream, greek yogurt, and just a touch of light mayo.



As a second option for your sandwich (I'm thinking about the kids here), I will also offer  Ham and Cheese Croissants. These sandwiches have Applegate Farms Natural Deli Ham (Whole Foods) and Havarti cheese as their filling. I would recommend Dijon mustard and lettuce also - so have some on hand! I will be giving you a combined total of 6 sandwiches.When you order you let me know how many of each type of sandwich you would like (i.e. 3 Chicken Salad and 3 Ham & Cheese/or/4 Chicken Salad and 2 Ham & Cheese). You get the idea :-)

Along side the sandwiches I will give you the most amazing Lemon Roasted Potatoes. These scream Spring! Super yummy yukon gold potatoes with a dressing of olive oil, fresh lemon juice and zest, fresh dill and garlic. 

I will include a large bunch of fresh Grapes so if the kids order the Ham & Cheese they can get their fruit with dinner.

We have to have dessert with this meal! Brownies just seem to be the perfect choice. So, I'll be making up some batches of my Insanely Good Fudge Brownies for you.

Here's How It Works

Thought I would re-post how Dinner's Done! works:
 An email is sent out every Thursday evening (usually by 9:00pm) with the menu for the next week. If you want in on the meal for delivery the next Tuesday you send me an email by Saturday evening. I email you back letting you know I have you down. Delivery every week is on Tuesdays. We only deliver in the Clemmons area. I send out a reminder email on Monday to put your cooler (with ice as weather begins to get warmer) and payment out on the front porch. That's it! The meal is the same price every week. Delivery is usually between 4:30-6:00. I hope this helps answer some logistical questions, especially if you are new to Dinner's Done!

In a nut shell:
Every week - 
Thursday - menu is sent out
Saturday - deadline for letting me know if you want in
Monday - reminder email sent out by me so you will put out cooler/payment
Tuesday - delivery between 4:30 - 6:00 (meal is waiting for you in your cooler when you get home)

Second Helpings For Sure

For Delivery on Tuesday, March 19th

Scoot up to the table and expect that your crew will want seconds and maybe even thirds of this flavorful and yummy soup. I know a few of you are soup skeptics..........but, even my picky soup eaters LOVE this one. A dear friend of mine who recently moved back to Texas gave me this recipe and it is a real winner. We're going organic this week -- Organic Pasta e Fagioli soup is chock full of amazing flavor. It is not a heavy meat soup (just a little pancetta), yet the beans and pasta make it very hearty, with lots of fresh herbs, veggies, and chicken stock. I'll serve it up with some Fresh Grated Parmesan and plenty of Warm Crusty Bread.



This soup begs for a great salad to go along with it - the Spinach Strawberry Salad w/ Candied Pecans, Feta, & Raspberry Poppyseed Dressing  will fit the bill. My kids like it with Ranch Dressing so make sure and have some on hand.

Carolina BBQ With A Twist

For Delivery Tuesday, March 12th

This week I am serving up some slow cooked Apple BBQ Pork Sandwiches. This pork is dry rubbed and marinated overnight then cooked slow with a wonderful combination of spices, apple juice, and apple cider for a sweet, smoky flavor.

 For a bit of a twist, I'm serving this along with a super healthy Broccoli Slaw Salad . The salad has dried cranberries and walnuts (on the side for my nut-sensitive families!) along with a greek yogurt (no mayo), dijon mustard, apple cider vinegar, and agave nectar (no sugar) dressing.

When having BBQ we can't live without a few Hushpuppies!



I'll also include some amazing Veggie Chips These are a great alternative to regular potato chips, but have great flavor and wonderful crunch. They are perfect with this meal and I promise your kids will love them!
