Going Tex-Mex Big Time

 I am so excited about this menu! Tex-Mex food is my specialty and this one will really take you south of the border. I make this Chicken Tamale Casserole when I am craving tamales that I had all the time in restaurants growing up in Texas. Homemade tamales are very time consuming, but this casserole is an easy swap for the more traditional tamales. Even better is this is an adapted recipe of mine from Cooking Light that comes in at about 350 calories per serving!! On the side, is a Smoky Chipotle Coleslaw that is super tasty. It has a wonderful smoky, sweet dressing that really stands out with chipotle, adobo sauce, and honey in it. This is also a light, healthy salad. I really want to give you flavorful, yummy food that is good for you.


Finally, I couldn't call this a Tex-Mex meal without including Rhonda's Texas Pinto Beans. I slow cook these overnight (no canned beans here) and add onion, jalapeno, garlic and seasonings with green salsa for amazing flavor. This is what leftovers are all about!

Healthy Comfort Food

For delivery, Tuesday, January 22nd

We're going old school with a healthy take on my grandmother's baked spaghetti recipe. Healthy Baked Spaghetti   is still so comforting and delicious, but good for you! That's my kind of comfort food. Made with organic lean ground beef, whole wheat pasta (don't worry you won't be able to tell the difference - I promise), a little green pepper, onion, and basil really give it some veggie goodness. I chop it up very small so even my kids don't realize it's in there! Great seasoning and about half the cheese my sweet grandma uses and it comes in at about 325 calories a serving! Along side this spaghetti I'm giving you a wonderful Caesar Salad with homemade Caesar dressing, fresh Parmesan cheese shavings, and sourdough croutons. This is one good salad, let me tell you. Kids usually really like this one. This dinner will easily give you leftovers as it serves 6-8 with pretty large portions.

Soup and Salad Night

We're lightening up the menu this week a bit with a great tasting, super good for you soup. The star of the show is a Lemon Chicken Soup with Orzo featuring thyme-scented, thick, lemony broth, delicate orzo, and meaty chunks of roasted chicken.

We need a great salad to go along with this soup and I have just the thing.  Iceberg Lettuce Wedges with Bacon-Gorgonzola Dressing. This salad is simple yet divine with the cool crispness of the lettuce paired with sharp, creamy dressing, topped off with turkey bacon crumbles. You can assemble this yourself and add as much or as little dressing and bacon as you  like. 


We will round out this meal with some wonderful Grilled Ciabatta Bread.

Great Start to a New Year

Happy New Year friends! This week's menu will help get you through this first week of 2013 for sure. I am going low and slow with some amazing Pulled Pork Burritos. This one takes a while to cook, so I'll have the patience and you get to enjoy. The pork will be rubbed with a blend of mexican seasonings and roasted along with carrots, celery, and red onions for a great stock to make the sauce for the pork. I have two great sides that can be used to stuff your burritos or if you just want to fill yours with meat, cheese and salsa and eat them on the side that works too! The Cilantro-Lime-Green Chile Rice is the perfect side dish or addition to the burrito. This Black Bean Salad is to die for. It has a great little dressing of spices, limes and olive oil mixed with black beans, corn, bell pepper, red onion,  cherry tomatoes, avocados and cilantro. For the vegetarian or vegan in your family this salad along with the rice will make a wonderfully full meal - so everyone will be happy!
