Tinga Time!

As many of you know, I was in Texas over the last two weeks helping out my mom and family during her illness. Thank you so much for your thoughts and prayers. She is doing amazingly well! Sorry we had to have such a long break in me getting your weekly meal to you. I'm really going to reward you this week with an amazing meal!

Speaking of Texas, we are going for true authentic Mexican flavor with our meal next week!  Chicken Tinga Tostadas are a wonderful build-your-own meal. What is Tinga you ask? Shredded chicken breast with a smoky tomato, chipotle-chili sauce. You'll start with freshly made tostada shells, and load them up with the shredded chicken tinga, refried beans, salsa, lettuce, cheese and sour cream. You can add any or all the toppings! Kids love the refried beans and chicken with cheese. I would also highly recommend adding avacado on top.

To serve along side the tostados will be  Green Chili -Lime TexMati Rice. I have been thrilled to hear how many of you love this rice!

While you're getting the meal on the table, you can set out some Fresh Fruit for everyone to munch on or have it as dessert! The fresh fruit will  include strawberries, blueberries and pineapple.

Food is Love

This week there will be lots of love going around! These Slow Roasted BBQ Chicken Tenders have an amazing BBQ sauce with hints of apple cider vinegar, garlic and brown sugar - yum.

 For the sides, I'm going back to my farm girl roots and making up a big batch of Home-style Green Beans, these have a little red onion, garlic, and lemon zest to give real depth of flavor. The Baked Cinnamon Apples are great with the BBQ chicken. What is better than a side dish that can also be dessert! 

 The Cheddar-Herb Biscuits need no explanation - they are that good.

Cozy Up!



For delivery Tuesday, Feb. 5th

This is one the kids are going to LOVE! My guys begged me to make this next week, so here we go. We’re cozying up with Baked Potato Soup.  This soup is made with russet potatoes, organic whole milk (no cream), organic white cheddar cheese, and organic greek yogurt. I use a very small amount of flour and butter to thicken, so this is a creamy and slightly chunky soup that taste rich, but isn’t. I’ll send along toppings of: crispy potato skins (instead of bacon!!) these are wonderful with a little sea salt and cracked pepper, extra sharp cheddar cheese, and green onions.
 
 Next on the menu is a super healthy and colorful Winter Fruit Salad with Citrus and Honey dressing . This salad has kiwi, red grapes, fresh pineapple, orange sections, and pomegranate seeds. The dressing is made with orange juice, lemon juice, honey and vanilla. Finally, I am offering your choice of Whole Foods Cracked Pepper Bread or sourdough rolls
