Simple Summer Supper

Tequila Lime Chicken

What is better than a Simple Summer Supper full of seasonal, fresh ingredients and wonderful summer flavors! This is my favorite time of year for food with all the fresh veggies and grilling out. We're doing both this week. Let's get started with Tequila Lime Chicken. Lean chicken breasts marinated overnight in an insanely intense mixture of tequila, lime juice, orange juice, jalapeno, garlic and chili powder, then grilled to perfection.

I have been waiting for all the great fresh summer veggies to make this dish for you. To go alongside the chicken, we'll have Orzo with Roasted Vegetables. This is such a great dish that combines eggplant, bell peppers, red onions, zucchini and grape tomatoes all slow roasted to bring out their amazing flavors mixed with orzo pasta and topped with a fresh lemon dressing, a little feta cheese and fresh basil.


I'll include my  Herbed Garlic Bread that starts with ciabatta topped with garlic, fresh oregeno and parsley, and little olive oil warmed in oven until toasty.

Mexican Many Ways

Mexican Chopped Salad with Mexican Green Goddess Dressing

As you all probably know by now, Mexican flavors are my favorite! I have been inspired this week by Gywneth Paltrow's new cookbook,  It's All Good. It's an amazing look at how we can still eat wonderfully flavorful foods, but keep it all whole and not processed.  I am giving everyone in your family great options this week. Every person can have Mexican food their way and you won't even realize how good for you it is. First, the Mexican Chopped Salad with Mexican Green Goddess Dressing is out of this world healthy and delicious. This salad has fresh corn, romaine lettuce, black beans, tomatoes, avocado and cilantro. The dressing is made with Greek yogurt, lime juice, a little jalapeno, olive oil and honey. It is very filling and can be eaten as a meal or you can use it to top off your tacos.


Organic Ground Chicken Tacos are a great, healthy take on our regular ground beef tacos. I'll add in some finely diced red and green bell pepper, onion, and a wonderful blend of Mexican seasonings with the organic ground chicken to really kick these up a notch.

At our house everyone has to have rice with their Mexican food, so I'm making one of our favorites - Mexican Red Rice (Arroz Rojo). This rice starts with organic Texmati rice, cooked in vegetable broth and a little tomato paste with garlic and onion. Simple, but perfect with all the other flavors we have going on. This rice could be added to your chicken tacos or serve as a base for your Mexican chopped salad. Like I said 'Mexican Many Ways'!

BBQ Time!

It's BBQ Time this week. I'm bringing you Slow Cooker Pulled Pork Sandwiches and Buttermilk Coleslaw . This meal will give you lots of ways to get everyone fed with a summertime schedule. The pork is marinated with a spice rub then cooked low and slow for that wonderful smoky flavor. This buttermilk slaw only has a little buttermilk to give it some creaminess, but don't worry it has a vinegar base for you die hard Lexington bbq fans! I know who I'm cooking for.

Pulled pork sandwiches have to include some amazing bbq baked beans. These beans have a wonderful combination of brown sugar, molasses, bbq seasoning and homemade bbq sauce. Yummy!

Happy Summer!

Happy Summer! I hope this finds you all breathing a sigh of relief and looking forward to vacations, pool time, reading, and longer, lazy days (yeah, right!) We can dream :-)  I'll try to help you get through at least one dinner next week with a starter of Fresh Veggies (Crudites) and Light Italian Ranch Dip. This is a great way to gather round and have everyone snack on their veggies while you get the main course ready to serve. Freshly cut veggies are served with a light and yummy dip that kids and adults love. If you have leftovers all the better as this snack is ready to go straight from the fridge.

Tortellini, Shrimp & Spinach in a Creamy Tomato Sauce is a wonderful pasta dish with a creamy sauce that isn't heavy. I know its swimsuit season!! Shrimp, tortellini and spincah are mixed with a light, yet creamy sauce for fabulous flavor with out weighing down the dish. The secret is plain Greek yogurt mixed in with the marinara sauce along with a little white wine and Parmesan cheese. This holds up well to rewarming, so it will be good to go when your crew can get to it.


 I feel like I have to give you guys some fresh bakery bread to go along with your pasta.  I'll get whatever looks best that day!

Greek Week

Chicken Gyros w/Toppings (Pita Bread, Tzatziki Sauce, Lettuce, Tomato, Red Onion)

We're going Greek this week! My inspiration for this meal came to me as I thought about how sad I was that we missed going to the Greek Festival this year. We love the gyros and it is my "must have" every year. So, here we go......Chicken Gyros w/ Toppings. These gyros start with a delicious marinade of lemon juice, olive oil, garlic and oregano. The chicken is then grilled and sliced so you can pile it on warm pita bread and top it off with plenty of cool, creamy tzatziki sauce. I will include fresh veggies to add as you like: sliced tomoatoes, red onion and lettuce. 

 
 
I have to include this amazing  Cucumber Tomato Feta Salad. This is a Greek favorite and it is wonderful to use as a topping inside your gyro or on the side. The salad has fresh seedless cucmber chunks, sliced cherry tomatoes, red onion and feta cheese in it. Combined with fresh basil, red wine vinegar, olive oil and honey. It is great as leftovers the next day, too!
 
 
 
Greek Style Potato Wedges will make you and the kids happy. These potato wedges are roasted until tender and crispy with delicious seasonings of lemon, garlic, greek oregeno and a little sea salt. Yummy!

Dinner to the Rescue!

Last minute change of plans, so I'll be here to give you Dinner to the Rescue! I know these last few weeks of school are killer......so, I'll try to make your life a little easier with dinner on your porch when you get home. My Chicken Spaghetti Casserole is low in calories, but big on flavor and hearty. This is a family pleaser with chicken, spaghetti, celery, red bell pepper and onion pulled together with a great sauce topped with cheese. This recipe has been in our family for as long as I can remember and it's a huge hit!


 I'll toss together a super healthy and flavorful Orange -Almond Spring Salad with Orange Vinaigrette. This salad starts with spring mix lettuces topped with mandarin orange sections, almonds, celery and a wonderful orange vinaigrette dressing. 


To round out the meal I'll include a fresh french baguette. This is the perfect bread to go along with your chicken spaghetti and salad.

Healthy Asian Take-Out

I am so excited about this meal! The Asian Turkey Lettuce Wraps are my take on P.F. Changs amazing appetizer, but they are a meal in themselves. The filling is lean ground turkey with fresh ginger, garlic, soy sauce and a mixture of minced veggies (carrots, green onions and water chestnuts). You wrap this yummy filling up in side a tender Boston lettuce leaves and top with chopped peanuts, cilantro and my Spicy Lime & Ginger Dipping Sauce

 
  Orange Chile Noodles are the perfect dish to go along with the Lettuce Wraps. Thin Chinese egg noodles with a slightly sweet orange sauce made with ginger, orange juice and zest, brown sugar, soy sauce and a little sweet hot chile sauce. I will give you extra of the hot chile sauce so you each family member can adjust to their liking!! Topped with scallions.


We'll round out this great Asian Take-Out with a Cantaloupe-Strawberry Salad. These are the fruits of the season and will be sweet and fresh!

Down Home Goes Up Town

Where did Spring go?? Well, to comfort us this week in the chilly, drizzly weather I'm going down home with my adaptation of my Mama Glee's meatloaf recipe. My Organic Meat Loaf has organic lean ground beef with a wonderful mixture of organic chicken broth, tomato paste, Worchestershire sauce, and breadcrumbs to keep the meatloaf moist. It is topped with a sweet ketchup mixture that my Mama Glee is famous for!




My guys have been begging me to make their favorite homemade Crusty Macaroni & Cheese and it goes perfectly with this meatloaf. This has a smooth, creamy cheese sauce made with White Cheddar and Gruyere topped with Panko bread crumbs. 



To get our  veggies in with this meal we'll go Up Town with a Bistro Salad. This is a yummy, simple salad with fresh herbs and an amazing champagne vinaigrette dressing.

Calzones Anyone?

Strawberry-Pineapple-Kiwi Fruit Salad

We LOVE calzones in our family and eat them at Mellow Mushroom every chance we get! To get our fix at home, I came up with these  Ricotta Calzones with Sweet Italian Sausage and Broccoli. It is as close as it gets to the great taste of your favorite pizza place with a healthy twist. These are made with ricotta, mozzarella, sweet italian sausage, finely chopped broccoli and a great mixture of seasonings nestled inside a wonderful pizza dough. They are served with Homemade Marinara.



To round out the meal this super colorful and yummy fruit salad is just the thing. This Strawberry-Pineapple-Kiwi Fruit Salad has a light dressing of lemon juice, honey and basil.



*Note - The Calzones will be delivered to you "ready to bake" in a 425 degree oven for approx. 30 minutes or until golden brown. Just like pizza these are best fresh out of the oven!

As always the Dinner's Done! meals serve 4-6. There will be 4 - 5 calzones with each order. These are pretty big and in our family we usually split one. I'll see how large they come out after I'm done preparing them and make sure you have plenty.

All About Spring

Something about Spring makes me feel so energized! All the beauty of the newly blooming cherry trees and amazing array of colorful flowers is such a welcome sight. This week's meal is inspired by all things Spring! The star of the show is one of my favorite Spring recipes. Lemon Chicken Pasta is wonderfully bright and flavorful. It is a simple, perfect combination of bowtie pasta and sauteed chicken breast combined with a light lemony sauce that has fresh lemon juice and zest along with chicken stock, a splash of cream and a sprinking of pecorino romano cheese.

Salads and Spring just go together and this one is my take on the super yummy Panera Fuji Apple Salad.  It combines mixed greens with red onion, apple chips, glazed pecans, gorgonzola cheese and cherry tomatoes topped with a great White Balsamic Dressing. The dressing is white balsamic, apple cider vinegar, dijon mustard, organic frozen apple juice concentrate, olive oil and spices.


Who doesn't love Freshly Baked Breadsticks? These are fantastic and will make everyone so happy!

Mexican Fiesta!

Organic Beef Enchiladas

Hope everyone is enjoying their Spring Break! To get you back in the swing of things next week's meal is one that is always a favorite. Organic Beef Enchiladas are simple and perfect for dinner any night of the week. My version of beef enchiladas are a bit healthier -- I grate together a small zucchini and onion to add to the organic ground beef. This adds fiber and extra vitamins. You won't even realize the veggies are in there. Add in my wonderful homemade red sauce, some green chilies and a little cheese and it is a done deal. . Each serving comes in at about 318 calories. 

Homemade Refried Beans and Mexican Rice are a must with these enchiladas. I make my refried beans (that aren't really fried) from scratch. Starting with slow-cooked pinto beans and building up the flavor with onion, spices and a little brown sugar.


The Mexican rice is a great combination of long grain rice, organic chicken broth, spices and salsa. Yummy!!



To top everything off, I have to include some Pico de Gallo. It is my all time favorite thing to top everything related to a mexican style meal with. I hope you enjoy it as much as I do! It is a little like a chunky salsa with tomatoes, onions, and jalapenos with lime juice and cilantro. No more explanation needed.

Happy Spring?!

For Delivery Tuesday, March 26th

Spring is here, but it sure doesn't feel like it. So, in anticipation of those warmer, sunnier days our menu this week will be all about Spring! We'll start off with Chicken Salad Croissants . These sandwiches have an amazing chicken salad filling. I start off with diced seasoned roasted chicken breast and add in pecans and walnuts, fresh herbs, and green grapes pulled together with a wonderful dressing of light sour cream, greek yogurt, and just a touch of light mayo.



As a second option for your sandwich (I'm thinking about the kids here), I will also offer  Ham and Cheese Croissants. These sandwiches have Applegate Farms Natural Deli Ham (Whole Foods) and Havarti cheese as their filling. I would recommend Dijon mustard and lettuce also - so have some on hand! I will be giving you a combined total of 6 sandwiches.When you order you let me know how many of each type of sandwich you would like (i.e. 3 Chicken Salad and 3 Ham & Cheese/or/4 Chicken Salad and 2 Ham & Cheese). You get the idea :-)

Along side the sandwiches I will give you the most amazing Lemon Roasted Potatoes. These scream Spring! Super yummy yukon gold potatoes with a dressing of olive oil, fresh lemon juice and zest, fresh dill and garlic. 

I will include a large bunch of fresh Grapes so if the kids order the Ham & Cheese they can get their fruit with dinner.

We have to have dessert with this meal! Brownies just seem to be the perfect choice. So, I'll be making up some batches of my Insanely Good Fudge Brownies for you.
