Second Helpings For Sure

Scoot up to the table and expect that your crew will want seconds and maybe even thirds of this flavorful and yummy soup. I know a few of you are soup skeptics..........but, even my picky soup eaters LOVE this one. A dear friend of mine who recently moved back to Texas gave me this recipe and it is a real winner. We're going organic this week -- Organic Pasta e Fagioli soup is chock full of amazing flavor. It is not a heavy meat soup (just a little pancetta), yet the beans and pasta make it very hearty, with lots of fresh herbs, veggies, and chicken stock. I'll serve it up with some Fresh Grated Parmesan and plenty of Warm Crusty Bread.



This soup begs for a great salad to go along with it - the Spinach Strawberry Salad w/ Candied Pecans, Feta, & Raspberry Poppyseed Dressing  will fit the bill. My kids like it with Ranch Dressing so make sure and have some on hand.
